During the holidays there is nothing like coming together with the family over a home cooked meal that has been prepared with love. I love baking, so some years ago I decided to try my hand at baking bread. The bread was a hit, especially with one particular cousin of mine who will take the whole batch if the family lets him. Over time I've come up with just the right combination for light fluffy sweet potato biscuits. They'll give you that feeling Martin has about his mama's biscuits on one of my favorite shows Martin.
Brandi's Sweet Potato Biscuits
These sweet potato biscuits are easy to make and will please any crowd.
Ingredients
- 1 (cooked and mashed) Large Sweet Potato
- 1/2 cup (as needed) Milk
- 1 1/2 cups Flour
- 1 tablespoon Baking Powder
- 1 teaspoon Salt
- 6 tablespoons cubed Cold Unsalted Butter
- enough for dusting Flour
- 3 to 4 tablespoons Honey (for glazing)
- 3 to 4 tablespoons Butter (for glazing)
- 2 tablespoons Sugar
Instructions
Preheat your oven to 425 degrees F. Line a cookie sheet with non stick foil (or grease with butter or cooking spray).
In a bowl mix your mashed sweet potatoes and 1/3 of the milk (reserve the rest of the milk in case needed later).
I like to place my sifter directly over another bowl and pour flour, sugar, baking powder and salt into the sift and shake into the bowl. Cut the cold butter into this flour mixture with your hands until coarse. Then gently fold in your potato mixture. If needed slowly add in remaining milk as needed just so that your dough is moist and slightly sticky (still holding it's shape) but not loose and gooey.
Dust your working surface with flour and place your dough on top. Lightly knead the dough a few times until it comes together. Use your hands to push the dough out into about 1/2 inch high.
I like to use a knife to cut the dough into 10 even individual biscuits, place on lined cookie sheet and use my hands to gently push in the corners so the dough is somewhat round. You can use a biscuit cutter for more uniform biscuits. Place biscuits in the center of the oven and bake for 12 to 14 minutes until firm to the touch. While biscuits are baking melt your additional 3 to 4 tablespoons and butter with the 3 to 4 tablespoons of honey. As soon as the biscuits are out of the oven pour the honey butter glaze over the biscuits and allow them to come to room temperature before serving.
